It’s a big week here in KC with the Chief’s in the Super Bowl this weekend. We are not Chief’s fans but it is exciting to have our home football team in the Super Bowl. I wanted to keep the prep light this week so I can focus on relaxing and prepping any food for the big game. What are you doing for the Super Bowl?

I always buy frozen cauli rice from Aldi’s. It’s makes prep so much easier! Once I cooked the meat, I made the eggs. I actually did over easy eggs that were runny to give the bowl extra flavor.

I used baby carrots so I don’t have to cut something else. I also omitted the potatoes. You could add in some cauli rice as well!
