Another week in quarantine. How are you holding up? The weather has been nice which has helped a ton and next weeks forecast looks nice and warm. We just ordered new patio furniture and I cannot wait to get it setup outside! I’m hoping to enjoy sitting outside for coffee and working!
Monday | Burgers with Roasted Sweet Potatoes
what I prep:
nothing
what I do the day of:
dice the potatoes
swaps for our eating plan:
kids use buns – you can use frozen fries too – For roasted sweet potatoes – Dice potatoes – toss with olive oil and salt and pepper – bake at 425 for 25 minutes on a baking sheet, stirring half way

chop onion – mix seasoning
what I do the day of:
make pasta – you could do this during the prep stage too

use whole wheat noodles
Wednesday |Open Pan Broccoli Cashew Chicken – Recipe HERE
what I prep:
dice chicken (I like to dice half frozen chicken as it’s easier to cut) – dice garlic and ginger – mix sauce – prep broccoli if using fresh

add rice for the kids
