This week the kids are going back to school and I have mixed emotions. It’s been fun as well as challenging having them home while we’ve been working. I worry that they’ll get sick or they’ll bring something home however I know they will be so much happier seeing their teachers and friends. Literally everyday they ask when they are going back to school. I’m sure once we drop them off, they won’t like it! I know it’s for the best and we’ll deal with whatever comes next. Right?
I kept this weeks menu pretty simple and a little fun withe some loaded sweet potato fries…yum!!
Monday | Pasta with Ground Turkey

I used a red lentil pasta which was really good added red sauce and ground turkey with garlic. Top with cheese! I added steamed broccoli as a side
Tuesday | Steak with Loaded Sweet Potato Fries – Recipe HERE

cheese sauce – cook bacon – slice green onions and tomatoes
what I do the day of:
slice potatoes

you can use cheese instead of making the cheese sauce 🙂
Wednesday |Canned Chicken Salad – Similar recipe HERE

dice celery and onion – measure spices (I would use a little less celery salt)

I used wraps for everyone and Wasa crispbread for myself. Added some raw carrots as a side to make it easy. I used grilled chicken breast strips from Costco instead of canned.
Thursday |Butternut Squash and Black Bean Enchilada Skillet – Recipe HERE

cube butternut squash – chop onion, jalapeno and garlic – measure seasoning
