I felt out of practice writing this post since I haven’t done it, well a really long time! You guys asked for the meal plan and prep back so you shall receive! This time Jen and I will switch off on what we have planned for the week. I do more prepping where as Jen has more of a planned meal approach with no prep. That way you get to styles and perspectives on meal planning.
Since I’m home alone with two kids and I never know what’s going to come up with work, I like to have majority of the meal prepped. I try to chop and mix spices as part of my prep, that’s really all. I don’t cook anything ahead or make all the meals. I like to keep it quick and simple. I don’t mind cooking the meals it’s more of the prep work that is time consuming especially when the kids are interrupting me. Let us know your thoughts on meal prep and planning!
For my meal plan, I lay out what I prep, what I do the day of and also if there are any swaps or additions for kids. Hopefully that makes it a little easier.

I add in cauliflower rice and keep the macaroni separate for the kids to eat with it
Wednesday
Air Fry Chicken with Roasted Veggies – Recipe HERE

mix seasoning – prep veggies if needed (I bag precut bags of veggies from Costco)

nothing

sometimes I’ll make rice for the kids
Thursday
Pork Tenderloin with Baked Sweet Potato and Broccoli – Recipe HERE (I use olive oil, S&P and garlic powder – cook 25-35 min at 400)

I use microwavable frozen broccoli from costco and microwave the sweet potatoes
